Uonuma Jozo is one of the world's largest factories, producing fermented foods such as rice koji and koji amazake. You can encounter flavors that can only be tasted here, such as koji .

So, I head to this construction site on Shiozawa. I’m all pumped, ready to estimate some costs. But then, bam! A freakin’ downpour hits.
